1/2 Marathon Nightmares

Hola!! Hope everyone is having a great day! My Sociology teacher cancelled class today, so I got to sleep in. It’s also my only class, so I have the whole day to do some studying. I’m also going to tackle my first run since I’ve been sick. I’ve been feeling so much better this week, but I didn’t want to start doing things to soon so I wouldn’t relapse. That is the last thing I want right now. I’ve been having pretty frequent nightmares about my half marathon. I show up to different half marathons, and I’m not ready to run at all. In the 3 or 4 dreams that I’ve had, my longest run has been around 7 miles. I’m at the race, and I’m talking to my friend trying NOT to freak out, but I know that I’m not ready. In one of my dreams, the Thunder players were there to run the 1/2 marathon too. That was a nice surprise. πŸ˜‰ I think I’ve just been having these dreams because I missed all last week of running due to sickness. I’m trying not to psych myself out because I want to get to the starting line confidently and run the race confidently. I just want to finish. I’m not running so I can complete it in a certain time, I just want to finish since this is my first race. Hopefully, I will just stop having these nightmares.

Also, I’ve been caffeine free for over a week. That is a really big accomplishment for me because for like 3 months, I would have at least one cup of coffee a day. Luckily, I’ve let that go. πŸ˜‰

Couchridden

Hello everyone! I hope you guys are enjoying this beautiful week and are spending your time outside, if the weather permits. πŸ™‚ I had planned to blog everyday this week since I was on spring break. I figured I could show you guys all my eats that I took to work and that I ate at home. I stocked up on delicious food on Friday so I could have nice pictures up. Sometimes, things don’t go as planned, and this is all I have.

You’re probably thinking “why is she eating saltine crackers and drinking Gatorade?! That’s not enough food to survive on?” You’re right. It isn’t. Except when you’re sick, and I’ve been sick since Tuesday morning. I have not been able to get up off the couch comfortably until today. I went to the doctor yesterday, but I was so uncomfortable. I was barely able to get off the couch. I’ve never felt so weak in my life, and I pray this doesn’t happen while I’m at school. I don’t think I’ve been this sick in such a long time. It’s crazy how one day you can be perfectly fine, hanging out with your BFF, then BAM! you can’t get off the couch the next. I’ve felt like the past 2 days have been the longest days of my life! I’ve watched so many Criminal Minds reruns, not that I’m complaining, but I wish I would have been a healthy girl while I was watching them, not dozing off when Reed is figuring out part of the crime. By the way, Reed is my favorite, and a very good looking guy. πŸ˜‰

Let’s get back on track, shall we? I think today I ate more in 2 hours than I have in 2 days. I’m finally getting my strength back, but I don’t think I’ll be able to run until about Sunday or Monday. I was really disappointed because I had planned on making this week amazing not only in what I ate, but also in my training. I looked at my schedule this week, and I think I’ll still be okay since I missed this week of training. I’m praying that my body will hopefully bounce back fast so I can get out there and run! I’m missing running so much. I even wore my running shoes to Wal-Mart because I’ve missed them THAT much!

Startin’ off the week

Holla everyone! Hope everyone’s Monday went well. I had to work, but it wasn’t too bad. I’ve seen days that were busier than today. It was pretty steady all day long so work wasn’t horrible. I didn’t really want to work over spring break, but I definitely need the money so I’ll just suck it up. haha. My job really isn’t bad. It’s pretty easy. It can be mentally draining at times, especially when customers have a lot of questions, but I enjoy helping people. I work at a pharmacy, and I really like all the people I work with so it makes the time go by faster. I’ve been working there since my junior year in high school which is kinda crazy! I’ve been there for about 4 years. I love it though. Things can get interesting sometimes too.

I got off work around 2:30, and I came home. My mom was here so I sat and talked to her for a while. She wants to get healthier and lose some weight so she was asking me about all the foods I eat. I was really excited that she was asking ME about this. I always throw out little suggestions my parents can take if they want to make foods healthier, like switching from white to whole wheat bread, and I also like to explain to them why they should. I usually feel like they just ignore what I have to say, which doesn’t really bother me, but today, it made me really excited that my mom was asking me for my knowledge. Small steps to make changes. One of my goals is to influence people around me to eat healthier and live healthy lives, and I like to lead by example. I also don’t try to push my ways onto people, I just like to suggest healthier options. I think people need to find a healthy diet they can make a lifestyle they will be able to stick to. I don’t want to tell someone to not eat meat anymore because I don’t, and then make them feel like they can’t/won’t want to stick to that healthy diet. Everyone is different, so we all have to find what works for us. The way I eat works for me, but it probably won’t work for my parents, which is totally fine. I like the way I eat, and I won’t judge the way you eat as long as you don’t judge they way I eat.

After my mom and I finished talking, I went with Kate to Wal-Mart so I could get some almond milk and So Delicious Coconut milk ice cream.

We topped the vanilla bean ice cream with organic banana and strawberries. Delish!

Eats from today:
I was in a rush today so I forgot to take pics of my food.
Breakfast:
1/3 organic oats with 1 organic banana and 1 tbsp Earth Balance Creamy Pb.

Lunch:
1 organic sweet potato with organic ketchup. 1/4 c organic black beans topped with organic salsa. Side of organic broccoli, cauliflower, and carrots. Organic Pink Lady apple for dessert.

Snack:
Ice cream topped with fruit (above).

Dinner:
My mom made me some mixed veggies in tomato paste. It’s my favorite way to eat veggies.

It has organic zucchini, yellow squash, broccoli, tomato, carrots, and I added black beans for protein topped with some cheddar cheese.
Dessert was a cup of organic Oikos vanilla greek yogurt topped with strawberries.

Kate and I had so much fun today! We took some pictures, and it was a blast. I love that girl so much. We always have a good time. I don’t know what I would without her!

Beginning of Spring Break

Hey y’all! Hope everyone had an amazing Sunday! I’m currently on spring break, so I am very very happy. This break could not have come at a better time. I was starting to feel a little overwhelmed with school.

I only went to two classes Friday because my nutrition teacher decided to cancel class. He’s awesome. Seriously, one of the best teachers I’ve ever had. I probably would have skipped organic chemistry, but he told us we were going to have a quiz so I went to class. When I arrived, he wasn’t even there yet, and I’m pretty sure I got to class a little past 9. When he finally went into the classroom, he told us that he couldn’t find any questions “that popped out” and were quiz worthy so he decided to cancel the quiz. The whole class cheered, and I was happy too except I sit next to a girl that was supposed to be in Mexico by then, but had to wait to leave until after the quiz. I absolutely do not like the drives to Mexico we used to make so I felt so bad that she stayed for pretty much no reason. Anyways, he just went over notes. I’m pretty sure he just told us we were having a quiz so no one would miss yesterday. After my classes were over, I went back to my apartment to clean up and pack my stuff so I could go home! I headed back to my parent’s house around noon. I picked up my check because it was pay day (!!!), then made plans to go with Kate to Green Goodies so we could start off our spring break on a good foot. It was absolutely delish!

I also got a mix of tart and strawberry fro yo topped with fresh strawberries, blueberries, almonds, and granola.

We enjoyed our cupcakes and fro yo with some much needed girl talk. πŸ˜‰

We, of course, stopped at Whole Foods so I could pick up some fresh produce. I’m trying to include a variety of fruits and veggies so I don’t get sick of my favorites. I always feel like they think I’m shopping for two people, but I’m really only buying food for myself. I love to share my food, but my parents eat differently than I do so I just eat my food most of the time. Friday’s trip was actually a smaller trip which was good. I really wish that Whole Foods was closer than an hour hour drive though.

After we were done at Whole Foods, we decided to stop at Panera to get some dinner. I got the garden veggie soup and a thai chicken salad minus the chicken with a baguette. Perfect. πŸ™‚

We headed home after that, and I came to find my niece Isabella and my nephew Maddux at my parent’s house. They are adorable. I seriously look forward to seeing them on the weekends. Later that night, I also go to see two of my other nieces, AnaSophia and Selena. I went to bed kinda late because I was talking to my brother.

Since I went to bed late last night, I slept in until about 10 yesterday morning. It felt amazing. My brothers, sisters-in-law, and my nieces and nephew were all eating brunch when I got up so I joined them. I love Saturday morning because we all get together and my mom makes brunch. It’s so nice to catch up with everyone after a long week. I have one of the best families ever! We’re all close, and we keep up with each other. After breakfast, I played with Isabella and AnaSophia, and I painted their nails. They are such girly girls. I love it! I spent the rest of the day helping my mom take care of the kids. It was fun.

Here are some eats:
Breakfast:

toast with Justin’s vanilla almond butter with banana slices. With a small cup of coffee. I’m trying to cut back.

Lunch:

Green monster with 1/2 banana, 1/2 cup frozen blueberries, spinach, Vega Tropical protein powder, 1/2 cup frozen mango, stevia, and ice. With a pita and hummus on the side.

Snacks:

Strawberries

Jicama topped with lime and chili powder

Dinner:
Cereal with almond milk and fruit.

I’m fueling up so I can go tackle another long run. There weren’t any 5K races close to me this weekend that I found so I’m just going to run another 6 miles. I’ll probably run them at the gym because it’s super windy outside. Terrible.

I’m off to finish my smoothie and read some of Catching Fire! I hope I can finish the last two books in the Hunger Games series during my break and see the movie.

Wonderful Wednesday

How amazing is today?! I think it’s pretty stinking amazing! The weather is awesome. It’s currently 73 degrees! It feels like spring! I’m so excited, as if you couldn’t tell. πŸ˜‰ This week has been a somewhat odd week. I don’t know, I just didn’t feel great, and just different things going on. Nothing bad, just somewhat odd. πŸ˜‰ I did get some awesome news this week, but I’m not ready to share them just yet. I’m hoping maybe later this year I will be able to. I don’t want to leave anybody in suspense, but it’s just something really important to me so I’m hoping I can come back with good news later on this yeat. πŸ™‚

I don’t have any tests this week so I’ve just been catching up on homework that I put off due to studying. I’ve been eating pretty healthy. I have also been able to run outside! On Sunday, I went home, had dinner, then set out for my 6 mile run. The weather was a tad bit chilly, but it was amazing to be running outside. My watch gave out at mile 2.5 so I just kept going since I knew what route to take to complete my 6 miles. It was dark by the time I finished, but it was almost 9 pm so it should be dark. Yesterday, I ran outside again. I completed my 4 miles in about 43 minutes which was pretty good since it was really windy. I think I got a little tan. I need to start working on it before summer. πŸ˜‰ Just kidding. I really need to wear sunscreen. I definitely try to protect my skin because my grandma had to have some skin removed so it could be tested and it came back positive that it was skin cancer. After that, I’ve tried to be more careful so I won’t have to deal with that. Protect your skin, guys! πŸ™‚ Today, my friend and I went to walk outside again since it’s so darn nice! We walked about 2 miles. It was hotttt. I loved it though. πŸ™‚ We came home, ate a snack, and headed to library to “study.” She studied, and I finished some homework, but then got on Pinterest for the rest of the time we were there. Oooops πŸ˜‰ I will finish the day being productive though. I still have a couple of hours before I go to bed.

Eats:
On Monday, I made Mama Pea’s Healthier Homemade pop tarts. I burnt the bottom a bit, but they were still delish! If you haven’t made these, GO. NOW. They are amazing! I made them for my family this weekend, and they LOVED them! I’m trying to slowly try to get my family to eat healthier, so I’m making delicious recipes so they’ll like them.

Breakfast:
I had my usual bowl of oats with 1/2 banana, 1/2 tbsp chia seeds, 1/2 tbsp PB, stevia, and cinnamon. I need to buy some greek yogurt so I can have that for breakfast now that it’s getting warmer outside.

Lunch:

mixed veggies in tomato paste, and some spices. My mom made this for me on Sunday so I could bring it back with me. I added black beans for protein. I also had an unpictured side of two small red potatoes with Annie’s organic BBQ sauce. Apple for dessert.

Snacks:

JICAMA with some chili powder! This vegetable totally reminds me of Mexico because we would eat this all the time when we would go visit family. Love it! It’s crunchy and tastes amazing when it’s cold. You can also add it to salads for an extra crunch.

Dinner:

Dr. Praegers burger on a whole wheat english muffin with a side of cucumbers and carrots. So filling.

So I’ve been wondering why in the world I’m so hungry! I’ve tried to follow my cues of when to eat, but I could never get satisfied. I figured out that I haven’t been drinking enough water. DUH Jessica! So I’m going to make sure that I’m drinking enough water so I don’t eat everything in my kitchen. πŸ˜‰

I need to get back to homework. Bye!!

Relaxing Weekend

Hey y’all!

I know I haven’t posted since Wednesday, but I was busy studying for my Immunology test. I’m not sure how it went because I didn’t stay to see my grade. I’m really scared to look. I felt sooo drained when I came out of the test. It’s like it took everything out of me. After the test, I went home, grabbed my jar of honey roasted pb and a spoon, and sat on the floor. I need to figure out my life. πŸ˜‰ just kidding, but I really did grab the pb jar and spoon. I came home Friday afternoon, and I’ve had a pretty relaxing weekend. I played with my nieces and nephew, worked out, went to get groceries, and today, I went to church, which was great, had breakfast, then came to work, and after work, I’m going to tackle a 6 mile run! I don’t know if I want to eat dinner first or go run first. I guess I’ll see how hungry I am at 6. πŸ˜‰

Since I’ve been trying not to think of anything this weekend, I’ve forgotten to take pics of some of my meals. But I do have some pics of random things I’ve eaten since Wednesday. I’m going to try to get better about taking pictures of all my meals.

Eats:

Eat, Study, Sleep, Repeat

Hey guys!! How’s everyone’s week going so far? Good? Good. πŸ™‚

So since my last post, I feel that all I have been doing is wake up, run, eat, study, eat, study, eat, study, steat (study and eat at the same time πŸ˜‰ haha), read a few blogs, study, eat, study, sleep, and then waking up and doing it all over again. I know, I have the most exciting life you all have ever seen. πŸ˜‰ #collegestudentproblems. I’ve been studying my Immunology since I have a test this Friday, and I really want to make a good grade. I hope all my hard studying will pay off. I also get to go to another Thunder game with my best friend, Kate, tomorrow night, so I’m trying to make up for the few hours I won’t be studying because I’ll be at the Thunderdome cheering on my boysss! ThunderUP!!

Like I said, my schedule has consisted of eating, so here are yesterday’s eats:

Breakfast:

1/3 c oats with 1/2 banana, stevia, cinnamon, 1 Tbsp Chia seeds, 1 Tbsp Honey roast PB, and frozen blueberries. Hot lemon water in my Anthropologie mug.

Lunch:
I was craving veggies so I made a huge salad.

Romaine lettuce, spinach, green beans, cucumber, broccoli, cauliflower, carrots, zucchini, squash, and black beans topped with salsa. A plum for dessert.

Snacks:
I was very snacky. I’ve been hungrier than usual, but I’ve also been running a lot more so it’s okay. πŸ˜‰

I made a new drink that is my favorite! Blueberry green tea lemonade!

Blueberry Green Tea Lemonade
2 Yogi blueberry green tea bag
1 pkt Pure Crystal Light lemonade
ice

Directions:
Place tea bags in warm water in a large cup for about 5 minutes. Take tea bags out and mix in Crystal light lemonade. Pour tea over ice and enjoy. πŸ™‚

This is soo delicious and refreshing! I love it!

Friday Fun

Hey! How’s it going? Hope everyone enjoyed their day. πŸ™‚

I had an amazing Friday! It started off with school, but of course, that wasn’t what made my day great. It’s just mandatory that I go to class. πŸ˜‰ Anyways, I headed home around 1:30 and I made a stop at Starbucks so I could get a skinny peppermint mocha. My favorite! πŸ™‚ I got home around 2:30 to find my mom making a vegetarian meal since we can’t eat meat on Fridays since we’re Catholic. I love Lent because we eat a lot of vegetarian meals which is nice for me. She made lentils, fried potato patties, and a couple other things. They looked soo good. Unfortunately, I didn’t eat any because I was going to go to the city with Kate. I love coming home and my mom being here because even though we sometimes argue, she is one of my best friends, and I always have stories to tell her when I get home from school, and I love that she’s always there to listen to me. She’s seriously such an amazing woman. I am so blessed to have her as my mom. πŸ™‚

Anyways, after I cashed my check (it was pay day!!), Kate picked me up, and we headed to OKC. Our first stop was Green Goodies by Tiffany. It’s a cute cupcake and frozen yogurt place that makes organic, gluten free, and vegan cupcakes and cookies. They also have organic fro yo and coffee. It was adorable!

They were both soo stinking delicious! Kate got a cupcake and a mix of dark chocolate fro yo and salted caramel fro yo. I’m pretty sure we both want to go back soon. πŸ™‚

After, we headed over to Whole Foods to do a little grocery shopping. I had a stock up shopping trip because I needed quite a few things, but I think I might have gone a little overboard. Oops. Oh well. πŸ˜‰

We built up an appetite shopping for groceries, so we headed over to Chipotle for dinner! It was so good, but seriously, when is Chipotle not good! πŸ˜‰ We both got salads. Mine was the vegetarian salad with black beans, brown rice, veggies, and pico, and Kate got the chicken salad. I forgot to take pics. What’s new. Haha

We headed back home after dinner. It was seriously just what I needed after a week with 2 tests and being sick with pink eye and a cold. Kate and I always have such a good time when we’re together. She doesn’t judge my coffee addiction or my Whole Foods shopping addiction. πŸ˜‰ She’s always up for trying a new place with me, like Green Goodies by Tiffany, and I love that! πŸ™‚

Well just thought I would post about my awesome day!

Walking Disease

Hey hey!
Guess who has conjunctivitis a.k.a pink eye?!

This girl!
I also have a stuffy nose, cough, and my throat has been hurting. Grrreeeattt. Pretty sure I was just sick like 2 weeks ago, and I went to the doctor to get an antibiotic and allergy medicine. I’m a very lucky girl though because my parents are bringing me some medicine for my eye and throat so hopefully that will make me feel better. I called them this morning because I thought my mom had to work early. She usually goes in about 6 am so I called them a little before because I was awake trying to clean my eye since it sealed shut from all the green junk coming out of my eye. The conversation went like this:
Dad-Hello?
Me-Hey dad. Is mom there? Did she work today?
Dad-No. She’s off today.
Me-Oh sorry. Sorry I woke you. I can call back later. (I’m still not sure why I said this when I had already woken them up)
Dad-What’s wrong?
Me-I think I have pink eye.
Dad-How do you know?
Me-My eye is sealed shut with that green junk that comes out of your eye when you have pink eye.
Dad-Oh. Here’s your mom…
Mom-Are you okay?
Me-I think I have pink eye.
Mom-I thought you had a cold?
Me-Yeah, but now I have pink eye too. I’m a walking disease!
Then she laughed and pretty much said they could bring me some medicine today. They’re great parents! I feel bad since their daughter is a walking disease. Would it be socially acceptable if I walked around in a bubble suit? πŸ˜‰ just kidding. Kinda.
Have you gotten sick?
I’ve had horrible allergies this year thanks to all the stuff in that air and the Oklahoma wind.

Anyways, I had a test today in my Sociology class, and I got back my grade from my organic test, and I did pretty well so I’m a very happy girl. πŸ™‚ My next test is next Friday, but I need to start studying soon because I’m sure it’ll be hard. I need to learn to manage my time better and not procrastinate.

Training has been going really great! My ankle hasn’t hurt so I’m excited about that. I ran 3.5 miles Tuesday and yesterday, I went to walk the trail with Tia. It was such a nice day. It felt like Spring! 65* outside so we had to take advantage of the nice weather. I’m planning to run 3.5 more today, but I’m going to see how my eye is because I want to be able to run with my contacts and not my glasses.

I’ve stopped by the coffee shop a couple of times this week so I could get a skinny vanilla latte because I needed the energy to continue studying. On Wednesday, the guy who made my latte made me the BEST tasting latte I’ve ever had. Thank you sir for making my day. πŸ™‚
